This is a wonderfully sweet and refreshing microlot from El Salvador, our first from this origin. It's one of 8 extra special microlots from the El Cirpes Estate, with this one being a yellow honey process, in the cup expect lychee and dates, with honey bringing it all together. It's well suited to both espresso and pour over, with both producing a fantastic cup, but with some greater depth as espresso.

This coffee comes from the El Cipres Estate, located on the North West slopes of the Picacho Volcano in the Bálsamo-Quezaltepec coffee region. The farm itself has been cultivating coffee since the late 1800's and recently achieved RFA certification following a number of improvements the current owners, the Alvares Gallardo family, have made.

The estate is made up of 90 hectares of coffee producing land and 5 hectares of lush natural forest, which has allowed the wildlife to flourish. Starting at 1070 masl, the farm is a long thin strip of land which climbs up to 1800 masl, producing 3000 bags annually.

This microlot is the product of a collaboration between El Cipres and the El Borbollon Mill in Santa Ana - where a set of 8 uniquely processed lots have been created using the best cherry from the estate.
