This is the second bean we've had from the Huye Mountain washing station, and is another great example of a washed Bourbon from Rwanda. Bold, juicy and sweet (think Marmalade & Golden Raisin) with a lovely jammy mouthfeel. It works great as both filter where there's syrupy sweetness, and as espresso expect the same syrupy sweetness with stone fruit shining through as well. 

This coffee comes from the Huye Mountain washing station, made famous in recent years as it was the focal point in the documentary 'A Film about Coffee'. It is located on the slopes of the Huye Mountain in the Huye District in South Rwanda and is owned by David Rubanzangabo, where he takes a philanthropic approach to his work. He cares deeply about the smallholder farmers who deliver their coffee to his station and his focus on quality has brought large increases to the prices paid to local farmers, as well as yielding a number of top spots in the Cup of Excellence coffee awards. 

To encourage consistency, David awards farmers whose coffees carry the highest cupping scores with the prize of a cow (40 winners last year) or a goat (60 winners). A cow makes a huge difference to the lives of a family since it will provide milk for around 6 years and is a constant supply of organic fertilizer for the coffee trees. 

The coffee processing is based on washing the coffee with a set up that is typical throughout East Africa. The freshly delivered coffee is inspected to ensure only good red and ripe cherries are included. It is then pulped before placing in a dry fermentation tank for 12 to 15 hours. After this the mucilage is loose enough to be washed away and the tank is then filled with water and the coffee turned with a large wooden paddle before being drained. This process is repeated a further 4 times to ensure the coffee is clean before being transported to raised beds for drying for between 15-20 days.
